Payasam (Rice Pudding)

Ingredients

4 1/2 cups Milk
2 Tbsp Cashew Nuts
3 Cardamom Pods
3 Tbsp Raisins
1/3 cup Rice
1/3 cup Jaggery syrup
1 Tbsp Ghee

Cooking Procedure

  1. Bring milk to a boil in a heavy bottom pan.
  2. Reduce heat and simmer it for 15 to 20 minutes, stirring frequently.
  3. Remove the seeds from the cardamom pods and crush the seeds.
  4. Add it to the milk.
  5. Add the rice.
  6. Cover the pan and contiue to cook over low heat for about 20 to 30 minutes, until the rice is soft.
  7. Remove from the heat.
  8. Stir-in the Jaggery syrup.
  9. Temper cashew nuts and raisins in Ghee.
  10. Stir it in the Paysam and serve.

Other Flavours

  • A pinch of saffron can also be added for flavour.
  • Vermicelli may be used instead of Rice.
  • Jaggery syrup can be substituted with Sugar syrup or honey.
  • Substitute Condensed milk for milk and use less syrup for better taste.

Tips

  • Cook Rice in a pressure cooker with more water in order to make it soft and use this. This reduces cooking time.
  • Jaggery pieces can be added directly instead of Jaggery syrup.
